Toast toppers

These nutritious and quick to make toast toppings provide a combination of healthy fats, protein, and fibre to keep you energized and satisfied throughout the morning.

Toast your wholemeal or multigrain bread and top with any of the following:

  1. Spicy avocado: Mash 30g of ripe avocado with ¼ teaspoon of taco seasoning and spread onto your toast. Add some rocket or a poached egg on top for variety.
  2. Almond butter and banana: Spread almond butter on your toast and top it with a sliced banana. Drizzle with a small amount of honey for added sweetness or sprinkle some cinnamon on top.
  3. Smoked salmon and creamed cheese: Spread a layer of light cream cheese on toast and top it with thin slices of smoked salmon. Add some sprigs of dill and a squeeze of lemon juice for a refreshing twist.
  4. Hummus and tomato: Spread a layer of low fat hummus on toast and top it with sliced tomatoes. Add some cracked pepper, and a few fresh basil leaves for a burst of flavour.
  5. French Toast topped with berries and yoghurt: You’ll find my French Toast recipe in the breakfast section of book 3. Serve with berries and a dollop of no fat vanilla yoghurt.

Cooked breakfast options

  1. Porridge with stewed fruit: Simmer sliced apples, pears, or mixed berries in a saucepan with a little water and cinnamon until the fruit is soft and syrupy. Serve it warm over a bowl of porridge for a cosy and nutritious breakfast. Or for a simple way to add sweetness to your porridge, add a handful of sultanas to the pot while it’s cooking.
  2. Veggie omelette: Whip up a hearty omelette using egg whites and fill it with sautéed vegetables like spinach, mushrooms, capsicum, and onions. Top it with a sprinkle of low fat cheese for added flavour. This protein-packed breakfast will keep you satisfied and provide essential nutrients.
  3. Healthy fry up: Either poach or use cooking spray to fry eggs. Dry fry lean short cut bacon, and add sliced mushrooms, baby spinach and tomato to the pan for a delicious one-pan breakfast. Another healthy add on is baked beans. Serve with multigrain toast spread with low fat margarine.
