2 cups self-raising flour
1 cup dried mixed fruit
¼ teaspoon cinnamon
¼ cup white sugar
½ cup skim milk
4 tablespoons (60g) Flora® Light margarine melted
2 egg whites
2 teaspoons extra white sugar to sprinkle on top
cooking spray

Method

Preheat oven to 200ºC fan forced.

  1. Place sifted flour, mixed fruit, cinnamon and sugar into a large mixing bowl and mix well.
  2. Combine milk with melt margarine then add in egg whites to milk mix and beat together using a fork until combined.
  3. Add milk mixture to dry ingredients and mix well.
  4. Place a large spoonful of mixture onto a flat baking tray that has been coated with cooking spray.
  5. Repeat until you have 12 rock cakes then sprinkle extra sugar on top of each one. Bake 20 minutes.

Suitable to be frozen.
