2 x 250g skinless chicken breasts
cooking spray
75g 97% fat-free ham slices
4 tablespoons no-added-salt tomato paste
1 cup (100g) 30% reduced fat tasty cheese freshly grated

Preheat oven 180°C fan forced.

  1. Flatten chicken breasts using a meat mallet until double in size. Cut each piece into 2 so that you have 4 pieces in total.
  2. Place each piece on a baking tray that has been coated with cooking spray.
  3. Place equal amounts of ham slices over each piece of chicken.
  4. Spread 1 tablespoon of tomato paste over top of each piece.
  5. Sprinkle ¼ cup of cheese over top of each piece of chicken, then bake 25-30 minutes or until chicken is cooked.
