4 medium size potatoes
4 medium pieces (400g) pumpkin (Kent)
4 medium pieces (400g) sweet potato
4 medium size carrots
4 small onions
cooking spray

Method

Preheat oven 230°C fan forced.

  1. Peel and cut vegetables to your liking. Keep onion whole.
  2. Microwave with a little water for 10 minutes on high, drain.
  3. Place vegetables on tray that’s been generously coated with cooking spray then generously spray over vegetables. Bake on top rack 30-40 minutes or until golden brown, turning once.
