12 bamboo skewers

SAUCE
1 teaspoon crushed garlic (in jar)
⅓ cup onion finely diced
cooking spray
¼ cup crunchy peanut butter
1 tablespoon soy sauce 43% less salt
1 teaspoon ground coriander
½ teaspoon ground cumin
½ teaspoon ground turmeric
¼ teaspoon chilli powder (optional)
¾ cup evaporated light milk
½ teaspoon coconut essence
6 x 100g butterfly pork steaks

Method

  1. Soak bamboo skewers in water before use to avoid burning.
  2. Sauce: Sauté garlic and onion in a small non-stick saucepan that has been generously coated with cooking spray, for 2 minutes.
  3. Add all other ingredients except pork, combining together well. Once boiled take off heat as evaporated milk can separate when over boiled.
  4. Cut each pork steak into two long strips. Weave each strip onto a bamboo skewer and grill until cooked.
  5. Pour sauce over each stick.

NOTE: Serve with Basmati rice. Not included in nutritional info.

Suitable to be frozen for 2-3 weeks.

Usually satay sauce is high in saturated fat and salt. Annette’s is both low in fat and salt making it a great alternative
