2 litres water
1 cup celery sliced
1 cup small broccoli florets
1 cup carrot diced
1 cup zucchini diced
1 cup potato peeled and diced
1 onion diced
1 x 410g can no-added-salt chopped tomatoes
1 x 440g can kidney beans drained and rinsed
½ cup small pasta noodles
½ cup no-added-salt tomato paste
4 teaspoons salt-reduced vegetable stock powder
1 teaspoon crushed garlic (in jar)
1 teaspoon dried basil
1 teaspoon dried oregano
½ cup parsley finely chopped
pepper

Method

  1. Place all ingredients into a boiler or large saucepan.
  2. Bring to boil, simmer 20-25 minutes or until vegetables are tender. Pepper to taste. To avoid pasta sticking, stir occasionally.

Suitable to be frozen.
