Mexican Meat Balls

½ cup breadcrumbs
½ cup skim milk
500g very lean beef mince
1 sachet (35g) salt reduced taco seasoning mix (Old El Paso®)
1 small onion finely diced
¼ cup tomato sauce
½ cup parsley chopped
1 egg white
cooking spray

Method

Preheat oven 190°C fan forced.

1: Mix breadcrumbs and milk in a small bowl, leave for 2 minutes.

2: Combine all ingredients in a large bowl. Roll into 18 small balls.

3: Place meatballs on a baking tray that has been coated with cooking spray. Bake 30-40 minutes or until cooked, turning once. Serve hot or cold.

Variation: Add ¼ teaspoon chilli powder to mix for hotter tasty meatballs or for a sauce pour a heated jar of salsa sauce over cooked meatballs.

Suitable to be frozen.

Dietitian's tip

The use of skim milk and very lean beef mince make this a low kilojoule alternative to traditional meat balls. A great recipe promoting heart health.
