600g skinless chicken breasts
1 onion
cooking spray
¾ cup red wine
2 fresh tomatoes diced
3 cups mushrooms sliced
1 cup green capsicum diced
2 teaspoons salt-reduced chicken stock powder
2 teaspoons crushed garlic (in jar)
1 tablespoon no-added-salt tomato paste
2 x 415g cans no-added-salt diced tomatoes
2 tablespoons fresh oregano chopped
1 bay leaf
½ cup sliced black olives
pepper

Method

  1. Cut chicken into bite size pieces.
  2. Peel onion then cut in quarters and slice.
  3. Brown chicken on both sides in a large non-stick frypan (that has a lid) that has been generously with cooking spray, then add red wine.
  4. Add all other ingredients to the pan, place lid on and leave to simmer for 15 minutes stirring occasionally. Pepper to taste.

NOTE: Serve with Basmati rice, cooked potato or noodles or for a lower carb option use glass noodles. Not included in nutritional information.

Suitable to be frozen.

Dietitian's tip

When the amount of carbohydrate is lower than 10g per serve then the effect on blood glucose (sugar) and insulin response is very small. This dish is excellent for people aiming to lose weight, and those with heart disease or diabetes.
