1 x 440g packet Singapore noodles
500g very lean beef mince
cooking spray
1 teaspoon crushed ginger (in jar)
1 teaspoon crushed garlic (in jar)
1 large onion diced
1½ cups carrots diced
1½ cups celery sliced
½ cup frozen peas
1 cup frozen beans
6 cups cabbage sliced
1½ cups water
2 tablespoons curry powder (Clive of India®)
1 tablespoon BBQ sauce
1 teaspoon salt-reduced beef stock powder
3 tablespoons oyster sauce
pepper

Method

  1. Prepare noodles as per instructions on packet. Leave to one side.
  2. Fry mince for 2 minutes in a non-stick wok or pan that has been coated with cooking spray. Add ginger, garlic and onion and cook until mince is cooked then remove from pan and leave to one side.
  3. Re-spray pan and sauté carrots and celery until half-cooked, add peas and beans and toss together and cook a further 2 minutes.
  4. Add cabbage to the mix and cook for more 2 minutes.
  5. Add water, curry powder, BBQ sauce, stock powder and oyster sauce. Pepper to taste.
  6. Once cabbage is cooked, fold noodles through mix. Combine noodles with vegetables and meat and serve when noodles are heated through.

Suitable to be frozen.
