PASTRY
1¼ cups plain flour
¼ cup self-raising flour
3 tablespoons white sugar
¼ cup skim milk
3 tablespoons (45g) Flora® Light margarine melted
1 egg white
cooking spray

FILLING
1 x 800g can pie apples
2 x 400g cans mixed berries (drained)
1 teaspoon skim milk
1 teaspoon white sugar

Method

Preheat oven 180ºC fan forced.

  1. Pastry: Sift both flours in a large mixing bowl then add sugar and combine.
  2. Combine milk with melted margarine then using a fork beat egg white into milk until blended. Pour into flour and fold together. If needed, use your hands to work the mixture.
  3. Roll out pastry onto a well-floured surface until you get a round shape approximately 32cm. Roll up pastry on the rolling pin to help lift it onto a flat baking tray that has been coated with cooking spray.
  4. Filling: Combine apples and berries then place in centre of pastry.
  5. Fold pastry edges over fruit so it has an edge all the way around pie. Brush pastry edge with skim milk then sprinkle sugar over pastry top. Bake for 30-35 minutes, or until pastry is golden brown.

Suitable to be frozen.
