1 bunch fresh asparagus
1 teaspoon crushed garlic (in jar)
½ cup onion diced
cooking spray
4 cups (300g) mushrooms quartered
¼ teaspoon ground turmeric
¼ teaspoon ground cumin
¼ teaspoon ground coriander
¼ teaspoon ground paprika
1 punnet cherry tomatoes

Method

1: Cut 3cm off end of each asparagus spear and throw away. Cut spears into 3cm pieces.

2: Sauté garlic, onion and asparagus in a non-stick frypan that has been coated with cooking spray for 2 minutes.

3: Add mushrooms and cook for 2 minutes.

4: Add spices and cook 1 minute.

5: Add tomatoes and cook 1 to 2 minutes or until heated through.

Suitable to be frozen.

Mushrooms contain vitamin B12 responsible for blood cell development.
