1 onion diced
1 teaspoon crushed garlic (in jar)
cooking spray
1 teaspoon ground cumin
1 teaspoon ground coriander
1 teaspoon crushed ginger (in jar)
1 teaspoon ground turmeric
2 teaspoons salt-reduced vegetable stock powder
2 cups boiling water
2 cups pumpkin (Kent) diced
2 cups potato peeled and diced
1 cup green beans cut in half
¾ cup (150g) red lentils
1 x 415g can no-added-salt chopped tomatoes

Method

  1. Sauté onion and garlic for 2 minutes in large saucepan that has been generously coated with cooking spray.
  2. Combine cumin, coriander, ginger and turmeric with onion, sauté 1 minute.
  3. Dissolve stock powder in boiling water, pour into saucepan. Add all other ingredients, bring to boil, cover and simmer slowly for 25-30 minutes or until lentils and potatoes are cooked. Stir occasionally to avoid the mixture burning on the base of pot.
