Satay Beef Stir Fry

Beef Satay stir fry recipe. Satay Beef with a healthy twist.

250g lean rump steak
cooking spray
½ teaspoon crushed garlic (in jar)
⅔ cup onion cut in half then sliced
¾ cup green capsicum sliced
½ teaspoon dried coriander
¼ teaspoon dried cumin
¼ teaspoon dried turmeric
⅛ teaspoon dried chilli powder (or to taste)
1 teaspoon red curry paste
2 teaspoons soy sauce 43% less salt
½ cup water
2 teaspoons cornflour
2 tablespoons (30g) Bega® 25% reduced fat crunchy peanut butter

Method

  1. Cut steak into strips. Coat a non-stick frypan with cooking spray. Sauté steak until just cooked, remove from pan.
  2. Respray pan then add garlic, onion and capsicum, sauté for 3 minutes. Add spices and curry paste, cook for 30 seconds then add soy sauce.
  3. Combine water with cornflour then add to pan with peanut butter. Stir continuously until sauce boils and peanut butter is combined.
  4. Return rump to pan, coat with sauce and warm through.

Suitable to be frozen.
