Greek Salad

low fat healthy Greek Salad recipe

⅓ cup 100% fat-free French dressing
1 teaspoon crushed garlic (in jar)
1 teaspoon French mustard
4 cups cos lettuce
½ cup red capsicum large dice
½ cup green capsicum large dice
1 cup spanish onion thinly sliced
1½ cups continental cucumber large dice
½ cup celery sliced
1 cup tomatoes large dice
¾ cup (100g) reduced-fat feta cheese cubed
⅓ cup spanish olives sliced

  1. Place dressing, garlic and mustard into a small container, secure lid and shake well.
  2. Tear lettuce into pieces.
  3. Place all vegetables in a large salad bowl with lettuce and toss together.
  4. Sprinkle feta, olives and dressing over salad and toss together coating ingredients well.
