Cajun Rice Salad

1 teaspoon ground turmeric
2 teaspoons salt-reduced vegetable stock powder
1½ cups Basmati rice
½ cup carrots finely diced
½ cup frozen peas
½ cup frozen corn kernels
½ cup frozen cut green beans
½ cup red onion sliced
2 teaspoons ground Cajun seasoning
½ cup 97% fat-free mayonnaise
pepper

Method

  1. Bring a large saucepan three quarter filled with water to boil. Once boiling, add turmeric, stock powder and rice, stir well. Reduce to slow boil for 5 minutes.
  2. Add carrots, peas, corn and beans. Add extra water if needed and stir occasionally to avoid rice sticking to base of saucepan.
  3. Once rice is cooked, turn out into a colander and rinse well.
  4. Place cooked rice, onion, Cajun seasoning and mayonnaise into a large mixing bowl mix ingredients together well. Pepper to taste.

Variation: Omit turmeric for a white rice salad.

Not suitable to be frozen.

A high carbohydrate salad loaded with vitamins and minerals. For a complete meal select a low carbohydrate meat or fish dish.
