Method
- Bring a large saucepan three quarter filled with water to boil. Once boiling, add turmeric, stock powder and rice, stir well. Reduce to slow boil for 5 minutes.
- Add carrots, peas, corn and beans. Add extra water if needed and stir occasionally to avoid rice sticking to base of saucepan.
- Once rice is cooked, turn out into a colander and rinse well.
- Place cooked rice, onion, Cajun seasoning and mayonnaise into a large mixing bowl mix ingredients together well. Pepper to taste.
Variation: Omit turmeric for a white rice salad.
Not suitable to be frozen.
Dietitian's tip
A high carbohydrate salad loaded with vitamins and minerals. For a complete meal select a low carbohydrate meat or fish dish.
