⅔ cup (95g) orange sweet potato small dice
1 teaspoon crushed garlic (in jar)
⅓ cup onion small dice
⅓ cup celery small dice
⅓ cup red capsicum small dice
cooking spray
1 teaspoon red curry paste (in jar)
1 teaspoon white sugar
1 x 420g can salt-reduced baked beans in tomato sauce

Method

1: Place diced sweet potato and a little water into a small microwave dish. Cook on high 3 minutes. Once cooked drain and leave to one side.

2: Sauté garlic, onion, celery and capsicum in a saucepan that has been coated with cooking spray for 3 minutes.

3: Mix the curry paste with the vegetables, cook for 30 seconds. Add sweet potato and combine.

4: Add sugar and baked beans, combine well. Serve once beans are heated through.

Variations: Use ½ teaspoon red curry paste for mild heat,1½-2 teaspoons for hot. For a lower GI rating replace orange sweet potato with purple sweet potato.

Suitable to be frozen.

These beans are a good source of protein and are very high in fibre - great for making you feel fuller longer.
