Method
Preheat oven to 180ºC fan forced.
- Cake: Beat egg white and white sugar for 30 seconds in a small size mixing bowl using an electric beater.
- Combine orange juice with melted margarine and bicarb then add to bowl, mix well.
- Add orange peel then sifted flour and mix together using a wooden spoon. Divide mix into two small ramekin dishes that have been coated with cooking spray.
- Syrup: Sprinkle 1 tablespoon of brown sugar over the top of one pudding, then gently pour half of orange juice over top. Repeat this with other pudding.
- Bake 20 minutes or until firm to touch in centre. Leave to rest for 10 minutes before serving to allow the syrup to thicken.
Suitable to be frozen.
