500g (about 4 cups) pumpkin (Kent) diced
2 onions diced
1 large carrot sliced
2 teaspoons salt-reduced vegetable stock powder
½ teaspoon ground nutmeg
4 cups water
pepper

Method

1: Place all the ingredients into a large saucepan.

2: Bring to boil, then reduce heat, simmer covered for 20-25 minutes or until vegetables are soft when tested.

3: Puree soup in a food processor or with stick blender. Add pepper to taste.
