1 tablespoon no-added-salt tomato paste
1 sheet Lebanese bread
½ cup 97% fat free ham diced
⅓ cup onion halved then thinly sliced
⅓ cup capsicum diced
⅓ cup celery diced
⅓ cup pineapple sliced (optional)
½ cup mushrooms sliced
½ cup (50g) 30% reduced fat tasty cheese freshly grated

Method

Preheat oven 200°C fan forced.

  1. Spread tomato paste evenly over flat bread.
  2. Arrange all the toppings (except cheese) evenly over base.
  3. Sprinkle cheese over pizza. Bake for 15-20 minutes until cheese has melted and is golden brown. Cut into 6 pieces and serve with salad.

Variation: Replace ham with ½ cup (60g) cooked skinless chicken diced

Suitable to be frozen.

Using chicken rather than ham will make this lower in sodium and therefore an everyday dish for people with diabetes.
