Method
- Place margarine and marshmallows into a large ceramic bowl and microwave for 50 seconds on 50% power. Stir well until you have a smooth texture. If still lumpy put back in microwave for a further 30 seconds on 50% power.
- Fold coconut and dried fruit into marshmallow mix.
- Pour rice bubbles into bowl and combine well.
- Spread mixture into a slab tin (18cm x 28cm) that has been coated with cooking spray. Use the back of a metal spoon that has been dipped in hot water to help spread the mixture evenly. Refrigerate until set then cut into 20 slices.
NOTE: This slice is best kept in the refrigerator.
Variation: Replace mixed dried fruit with dried fruit medley (Angus Park®)
Or for an alternative to White Christmas only use white marshmallows in the mix.
Not suitable to be frozen.
Dietitian's tip
The variation for White Christmas is much lower in saturated fat than the traditional version. An occasional choice for people with diabetes.
