BASE
1 cup self-raising flour
4 crushed Weet-Bix®
½ cup sultanas (optional)
⅓ cup brown sugar (firmly packed)
6 tablespoons (90g) Flora® Light margarine
1 tablespoon golden syrup
2 tablespoons skim milk
cooking spray

ICING
1 cup icing sugar
1 tablespoon lemon juice
1 tablespoon skim milk
1 teaspoon (5g) Flora® Light margarine

Method

Preheat oven 180ºC fan forced.

  1. Base: Combine flour, finely crushed Weet-Bix®, sultanas and brown sugar in a medium size mixing bowl
  2. Melt margarine then add the golden syrup and milk mixing together. Pour margarine mixture into dry ingredients and combine well.
  3. Press mixture using your hand evenly over base of a slab tin (18cm x 28cm) that has been coated with cooking spray. Bake 20-25 minutes or until browned.
  4. Icing: Combine icing ingredients together in a small mixing bowl mixing until smooth. Pour icing over slice while still hot. Leave to cool. Cut into slices when cold.
