Apple Strudel

1 x 800g can pie apple (no added sugar)
½ teaspoon ground cinnamon
¼ cup sultanas
8 sheets filo pastry (Antoniou®)
cooking spray
1 teaspoon white sugar

Method

Preheat oven 200°C fan forced.

  1. Combine apple, cinnamon and sultanas in a medium size mixing bowl.
  2. Lay out one sheet of filo pastry and coat with cooking spray. Lay another sheet on top and coat with cooking spray. Repeat this process until all 8 sheets are used.
  3. Place apple filling along centre of pastry. Spray edges with cooking spray then fold right and left edges inwards, spray again, and roll pastry and filling carefully.
  4. Place strudel with fold side underneath on a baking tray that has been coated with cooking spray. Sprinkle sugar over strudel, pierce top to let out steam. Bake for 30-40 minutes or until golden brown.

Serve immediately as pastry will soften when left. To crisp again either place back in oven or under griller.

Variations: Replace apple filling with canned pie apricot or omit sultanas and cinnamon and replace with 1 cup frozen mixed berries for an apple/berry strudel. Suitable to be frozen.

Dietitian's tip

Filo pastry lightly sprayed with cooking oil makes the strudel low in fat and is a heart friendly recipe.
