Apple Blueberry Yoghurt Loaf

1 egg white
4 tablespoons white sugar
2 tablespoons skim milk
2 tablespoons (30g) Flora® Light margarine melted
⅓ cup (85g) Chobani® plain Greek yoghurt
¼ cup rolled oats
½ cup red apple peeled small dice
¼ teaspoon bicarb soda
½ tsp vanilla essence
¾ cup self-raising flour
½ cup frozen blueberries
cooking spray

Method

Preheat oven 180ºC fan forced.

1: Beat egg white and sugar in a mixing bowl for 1 minute using an electric beater.

  1. 2. Combine milk with melted margarine, pour into mix with yoghurt and mix using a wooden spoon.

3: Add oats, apple, bicarb and essence, combine well.

4: Gently fold sifted flour into mixture in one go. This is quite a thick mixture so be careful not to over beat, as this will make the loaf tough. The less the mixture is moved, the lighter the loaf will be.

5: Carefully fold blueberries into mixture. Spoon mixture into a small loaf tin (9½ x 19½cm) that has been coated with cooking spray, spread evenly. Bake 35 minutes or until firm to touch in centre. Leave to rest for a few minutes then turn onto a wire rack to cool.


Variation:
Replace blueberries with any berries you like, or replace apple with diced pear.

Suitable to be frozen.
