Winner winner low fat chicken dinner

healthy Apricot Chicken Stir Fry recipe

3 tips to make this Aussie favourite even healthier, plus 10 fabulous recipes to try!

Chicken is one of our top protein choices, in fact, Aussies eat around 49 kilograms each per year, that’s twice as much as beef or pork and six times more than lamb. Chicken is quite lean, but I want to share a few tips to ensure that you get the best out of your chicken and are putting a low fat chicken dinner on the table every time.

The great thing about chicken is it’s so versatile. You can bake, grill, poach, sauté, stir fry, barbecue, or add it to a casserole or pasta bake. You can serve it with a delicious sauce or gravy and a nice big serve of vegetables or salad, and this all-rounder is always a winner with young and old.

But when following a low fat healthy eating plan there are a couple of things to remember:

  • Most of the fat is in or under the skin of chicken
  • Thigh and legs are the dark meat and are higher in fat than the white (breast) meat

3 simple tips for tasty low fat chicken dinners

  1. Use skinless chicken breast as this is the leanest choice
  2. Look for the pinkest meat when buying chicken mince, if it has white pieces in the mix this is the skin and will mean it’s higher in fat
  3. Avoid overcooking chicken, especially breast meat, as this will dry it out

Bonus tip:

When making a stir fry, cook the chicken strips first with a little garlic and ginger in a quality non-stick pan then remove from the pan and cover with foil, this helps to retain the moisture. Cook your veggies in the same pan, then add the sauce ingredients, and lastly, add the chicken back to the pan and warm through. This will ensure the chicken stays tender and juicy.
