Honorary Senior Fellow Award

I am so excited to share my fabulous news with you. On the 4th of April I was presented with an Honorary Senior Fellow Award from the Sunshine Coast University, in recognition of my contributions to small business, entrepreneurship and health advocacy.

It means so much to me to be recognised for my contribution in these areas and it humbles me to think of the lives changed as a result of my journey.

Curries

I love curries and they are the perfect heartwarming dish for winter, but I don’t like them being too hot and for years thought the only way to make a curry was to use curry powder! However if you have never made a curry using different spices then you are in for a real treat.

By putting in one teaspoon each of tumeric, coriander, cumin, your curry will come alive. At this stage it isn’t a hot curry but just a tasty one, so if you like your curries hot then add in some chilli powder or fresh chilli. Start with 1/8 teaspoon of chilli powder and add more if you like it hotter. Just be careful because if you put too much chilli in the dish it can really spoil it.

I love massaman curry paste, which I use in laksa. I really like green curry paste too and I like to mix these pastes with my low fat coconut milk. Making my fantastic low fat version of coconut milk is simple; just use carnation evaporated light milk and a little coconut essence to flavour.

If you want to create a delicious curry then some my favourite recipes from my cookbooks would include - Mild Sweet Curry (Book 1), Green Beef Curry (Book 2), Chicken Laksa (Book 3), Butter Chicken (Book 4), Asian Lamb Curry (Book 5) and Indian Tikka Chicken (Book 6).
