SATAY PORK
Symply Too Good To Be True BOOK 3
Serves 6


6 x 100g new-fashioned butterfly pork steaks
12 bamboo skewers

SAUCE
cooking spray
1 teaspoon crushed garlic (in jar)
⅓ cup onion finely diced
¼ cup crunchy peanut butter
1 tablespoon soy sauce
1 teaspoon coriander
½ teaspoon cumin
½ teaspoon turmeric
¼ teaspoon chilli powder (optional)
¾ cup evaporated light milk
½ teaspoon imitation coconut essence

To make sauce: Coat a small non-stick saucepan with cooking spray, sauté garlic and onion for 2 minutes. Add all other ingredients combining together well, bring to boil, then leave to one side.

Cut each pork steak into two long strips. Weave each strip onto a bamboo skewer and grill until cooked. Pour sauce over each stick.

VARIATIONS:
REPLACE PORK WITH EITHER 600g SKINLESS CHICKEN BREAST
OR 600g LEAN RUMP STEAKS
OR 600g LEAN LAMB LEG STEAKS
OR 400g TOFU LARGE CUBES.
